ROCK SALT PRIME RIB
prime rib roast
½ cup water
Preheat oven to 500 degrees F. Line a roasting pan with foil and cover bottom of pan with rock salt. Place roast in pan and cover completely with rock salt, pressing salt into roast. Sprinkle with water. Roast uncovered 12 minutes per pound. Remove from oven. Hammer off rock salt and serve.

Is it bone in or boneless?
Depends on the temperature of your oven.
Get a thermocoupled thermometer and insert the probe in the center of the roast 1/2 way in.
It should be about 20-25 minutes to a pound at 325 degrees.
If you use a good thermocouple, with a digital readout and alarm you can set it for the desired doneness.
Be sure to let it rest for 30 minutes prior to carving.
