  1. Bring your steak(s) to room temp first before searing in the pan, about ten minutes should do it. This is important because throwing a cold steak into a hot pan means it will brown on the outsides quickly but remain cold in the centre for much longer, and this prevents your steak from being done in the centre.

    Cook your steak in a pan with an ovenproof handle.

    Get the pan hot, season your steak and smear or spray oil onto the steak instead of the pan.

    Place steak, oiled side down into your hot pan and sear until you have achieved the desired colour or caramalization. Usually this is just as moisture or blood spots start to appear on the surface.

    Turn steak(s) and continue to cook for a few more mins.

    Remove your pan from the hotplate and place into a preheated oven. Leave your steak in the oven until its cooked almost to the desired degree. How long will depend on how thick your steak is and how well you like it done. You can check by making a small incision in the steak and taking a look. Once you’ve done it a few times you will know how long it takes to get your steak just right without having to check it.

    Remove pan from the oven and set aside. Cover steaks loosley with foil and allow to rest for half the time it took to cook or at least 5 mins. Resting time allows all the juices to relax back into the meat giving you a steak that is more tender and juicy and not tough.

    The same process can be used if you cook on the bbq. Cook and remove steaks onto a ovenproof plate or dish and follow the above steps.

    Ive been cooking steaks this way for more than 20 years and it always turns out beautiful, its also how its done in restaurants. Hope this helps :)

  3. a 3 inch steak would be a roast in my book….. rub it with olive oil, and garlic, and black pepper, sear it on a cast iron skillet then put it in the oven and bake it on 350 for a half hour.

  4. I marinate my steak in soy sauce and paprika and lemone pepper and let it set in the fridge for about an hour then I love grilling them on the grill… use a thermometer.
